Korean Fried Chicken

Korean Fried Chicken Sandwich is a belter!
The slaw with the togarashi is an absolute must!
What You Need
Sauce
1/4 cup gochujang
3 tbsp ketchup (I used Sauce Shop)
2 tbsp mirin
2 tbsp soy sauce
2 tbsp honey
1 tbsp brown sugar
2 closed garlic grated
1 tbsp rice vinegar
Chicken Marinade - use a good sprinkle of each seasoning
4 boneless chicken thighs
1 cup buttermilk
Onion powder
Garlic Powder
Cayenne pepper
Brown sugar
Large pinch of salt
Black pepper
Pickle juice - couple dashes
Chicken Coating - just a little sprinkle of the seasoning here
1 cup plain flour
1 cup corn flour
Onion powder
Garlic Powder
Large pinch of salt
Black pepper
Slaw - this is the amount for a couple of portions
1/4 Shredded cabbage
1 carrot cut into matchsticks or grated
1/4 cup kewpie mayo
1 bunch spring onions
1 tbsp white vinegar
Juice of half lemon
Togarashi (sprinkle)
Salt and Pepper to taste
Other stuff
Bun or bread
Pickles
Oil for frying chicken
What You Do
In a bowl add all your marinade ingredients and whisk.
Add the chicken thighs and cover. Marinade for a least 4 hours but best overnight.
Slaw - prepare all the cabbage, carrot and spring onions and combine. In a separate bowl combine all the ingredients for the dressing and mix with the veg. Set aside.
Sauce - combine all the ingredients (except the garlic rice vinegar) in a saucepan. Whist until combined and simmer for 5 mins or so. Once done take off the heat and add straight to a bowl and mix in the garlic and rice vinegar. Set aside.
Time to coat - combine all the chicken coasting ingredients in a large bowl and mix. Add your chicken and make sure you press down and get the coating all over the chicken, right in the nooks and little gaps!
Time to fry - Heat your oil in a saucepan or fryer if you have one to 375°F. Carefully drop the chicken in and occasionally flip. Fry until golden brown and cooked through. Should take around 8 mins.
Once cooked set aside on a cooling rack and once cool toss in your sauce.
Bread or buns - if you go with a bun then melt a little butter in a pan and toast. I went with bread so just lightly toasted the bread.

Time for the most fun part. I went with:
Big helping of slaw

Pickles
Little more slaw
